Cooking with Chef Bryan: Chicken Calzones (KUTV)

  • 1 pound shredded cooked chicken
  • ½ cup diced bell pepper
  • ½ cup diced onion
  • 1/4 cup chopped chives
  • 2 garlic cloves minced
  • 2 cups prepared marinara sauce
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • prepared sour dough bread


In a large sauté pan, add the shredded cooked chicken (I use a rotisserie chicken), diced bell pepper, diced onions, chopped chives and garlic. Saute until fragrant (about 5 minutes).

Add the marinara sauce and mix together. Remove from the heat and let the mixture cool. Fold in the shredded cheese.

Roll out the dough for a calzone (about 6 by 6 inches).

Divide mixture between 4 calzones.

Fold each dough corner to corner to create a rectangular dough pocket. Pinch the edges together.

Place calzones onto a prepared baking sheet and into a 425 degree oven for about 20 minutes or until golden brown. If desired, brush the calzones with an egg wash before going into the oven.

Serve with hot marinara sauce for dipping and Enjoy!
