Cooking with Chef Bryan: Herbed chopped salad

Ingredients:

  • 4 cups chopped lettuce (use a variety of lettuce)
  • 2 cups kidney beans
  • 1 green bell pepper, chopped
  • 1 red bell pepper chopped
  • 1 bunch green onions chopped
  • 2 cups chopped mushrooms
  • 1 medium sized cucumber, peeled, de-seeded and chopped
  • 1/4 cup chopped fresh basil
  • 1 tsp freshly chopped thyme
  • 1/4 cup freshly chopped dill
  • 1 tbsp freshly chopped oregano
  • 1/2 cup dressing of your choice
  • 1 avocado, sliced
  • salt and pepper

Instructions:

  1. Combine all of the ingredients except the salad dressing of your choice and the avocados in a large stainless bowl.
  2. Add the dressing of your choice and toss to lightly coat the salad. Salt and pepper to your taste.
  3. Divide the salad and the avocado slices between 6 plates, Serve and Enjoy!
