Simplify Supper: Curried chicken salad

Ingredients:

  • 1/2 cup mayo
  • 2 tablespoons lemon juice
  • 3 teaspoons curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds chicken, cooked and diced
  • 1 cup celery, chopped
  • 1 cup seedless grapes, halved
  • 3 tablespoons slivered almonds, toasted

Directions:

  1. In a large bowl mix mayo, lemon juice, curry powder, salt and pepper.
  2. Fold in chicken, celery and grapes, Sprinkle with almonds.
