Simplify Supper: Traditional Irish shepherd's pie

  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 pound ground beef
  • 1 large onion, finely diced
  • 4 carrots, finely diced
  • 1 cup frozen peas
  • 3 sprigs thyme, finely chopped
  • 2 tablespoons flour
  • 1 tablespoon butter
  • 6 ounces red cooking wine
  • 2 tablespoons tomato paste
  • 2 tablespoons worcestershire sauce
  • 1 cup chicken stock
  • 6 cups mashed potatoes
  • 1 egg, beaten


  1. Preheat oven to 400.
  2. Saute carrots in olive oil until they are tender. Add in onions and saute for a minute then add in meat. Season with black pepper and thyme. Cook until browned and then drain any fat.
  3. Add the butter and peas.Sprinkle with flour and stir to combine. Add tomato paste, red cooking wine and worcestershire sauce. Let this reduce slightly until you have a gravy like consistency. Season to your taste.
  4. Remove from heat. Grease a 9x13 pan and add the mixture. Spoon the potatoes over the top and brush with the egg and sprinkle with parmesan cheese. Bake for about 20 minutes until top is slightly browned.
