Apple Crumble Cheesecake
Walnut Oatmeal Crust
- ¾ cup all purpose flour
- ¾ cup quick oats
- ½ cup brown sugar
- ½ cup butter
- 1 granny smith apple shred and remove excess water
- 1/2 cup walnuts, chopped fine
Preheat oven to 350 degrees. Line 8 inch spring form pan with parchment paper.
Mix flour, sugar and oats in bowl. Using a pastry cutter or hands cut cold butter into oatmeal mixture until resembles coarse crumbs.
Add shredded apples to cheesecloth. Squeeze out excess water.
Chop ½ cup walnuts very fine. Add walnuts and shredded apples to oatmeal mixture.
Pull out 1 cup of oatmeal mixture and set aside.
Press remainder into bottom of spring form pan and slightly up the sides.
Bake for 20 minutes or until light brown. Let slightly cool.
- 1 pound cream cheese (softened)
- ½ cup sour cream
- ¾ cup granulated sugar
- 1 teaspoon vanilla paste
- 3 large eggs
- 2 tablespoons Cornaby’s Thick Gel or Cornstarch
In large mixing bowl mix cream cheese and sour cream. Gradually add sugar and Cornaby’s Thick Gel until well mixed.
Add vanilla paste. Mix thoroughly. Add eggs one at a time. Scrape sides and mix again. Careful not to mix too long.
Wrap 2 pieces of heavy duty foil around spring form pan. Spread cheesecake mixture evenly over oatmeal crust. Place spring form pan in roasting pan. Pour enough hot water into pan to come halfway up the sides of the cheesecake pan. Bake until the cheesecake is slightly brown around the edges and slightly moves in middle when moved. Cheesecake will set up when cool. This should take 45 to 60 minutes.
Cool for 1 hour and then transfer to refrigerator for at least 4 hours.
To serve drizzle spiced apple mixture, encouraging some to run down the sides. Top with streusel. Recipes below
- 3 Granny Smith apples, peeled and diced small
- Juice from 1 lemon
- 3 tablespoons butter
- ¼ cup brown sugar
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon Cornaby’s Thick Gel or corn starch
In medium bowl add sugars, cinnamon, nutmeg and thick gel. Stir until mixed.
Add apples and juice. Stir until apples are coated.
Add butter to large skillet at medium heat. When butter has melted add apple mixtures. Cook until apples are soft.
- 1 cup reserved crust
- ½ cup chopped walnuts
Preheat oven to 350 degrees. Stir together ingredients. Spread of cooking sheet and bake for 7 to 10 minutes or until light brown in color.
