Grandma's Artichoke Stuffing
Chef Joe Russo shares his family’s tasty secret, just in time for Thanksgiving Day.

Ingredients - Grandma's Artichoke Stuffing
1 C diced carrots
¼ C sliced green onions
1 clove garlic
2 C sliced mushrooms
1 14 oz can artichoke hearts, drained and chopped
¼ C 2 dry sherry
½ C bread crumbs
3 T minced parsley
2 T grated parmesan cheese
¼ tsp pepper

Directions:
Coat skillet with cooking spray. Place over medium heat until hot. Add carrot,onion and garlic; sauté four minutes or until tender. Add mushrooms and sauté four minutes or until tender. Add artichokes and ¼ C sherry. Cook three minutes, stirring occasionally. Remove from heat and stir in soft bread crumbs and add last four ingredients.
