Better-For-You Beef?
Dr. Pam Nichols is a vet by day, and a rancher by - well, day, too! She says raising her cattle in a pasture - where they eat grass instead of grain - makes their meat lower-fat and -calorie.

And how about this recipe for "killer roast beef sandwiches?"

Buy a Sun Valley Grass-fed Beef roast of your choice. Figure 4-6 ounces per person per sandwich OR a 1.5 pound Roast for 5 people.

Lightly cover with salt and pepper or season salt.

Add 2 cups of water.

Cook in a slow-cooker on low until the meat falls apart (about 6-8 hours).

Au jus sauce prepared either from scratch or use Johnny's French rolls.
