Mother's Day Brunch
Chef Kimberly Larsen and her 7-year-old son Kole show us the perfect recipe for Mother’s Day brunch.
Strawberry Orange Mascarpone Crepe
2 cups strawberries, sliced
1 cup orange slices
8 oz. Mascarpone cheese
1 1/2 cup heavy cream, whipped to med stiff peek
1 tablespoons vanilla bean paste
1/4 cup sugar
1 package of prepared crepes
Mint sprigs for garnish
1.) In a medium bowl combined strawberries slices, orange slices and sugar (save some of the strawberries and oranges for garnishing).
2.) Set aside and allow to marinate.
3.) Combine mascarpone cheese and vanilla bean paste.
4.) Mix until smooth.
5.) Fold in 1/2 of the whipped cream.
6.) Fold in strawberries and oranges.
7.) Lay out prepared crepe. Spoon filling on 1/3 of crepe then roll up.
8.) Place in baking pan and repeat with all crepe shells.
9.) Bake at 350 degrees for 5 minutes, just to warm slightly.
10.) Serve with a dollop or two of whipped cream, a strawberry, three orange slices and mint sprig.
Bacon and Potato Medley Hash Browns
1/2 lb. Harmon's Bacon, cut in ribbons
1 lb. tri-color potatoes
1 lb. sweet potatoes and yams
3 garlic cloves
2 tablespoons sunflower oil (if needed)
Salt and pepper to taste
Dollop of crème fresh or sour cream and minced chives to garnish
1.) Peel potatoes and shred with food processor or grater.
2.) Shred shallot and garlic.
3.) Combined potatoes, shallot, garlic, eggs and flour in a bowl and season with salt and pepper. Don't over mix.
4.) In large skillet cook bacon ribbons until they start to get crispy.
5.) Remove from pan leaving bacon bits and oil in pan.
6.) Fold bacon into potato mixture.
7.) Heat skillet back up to medium heat, adjust oil do that it coats the bottom of the pan.
8.) Add bacon potato mixture to cover surface of pan, careful not to overload.
9.) Cook for 4-5 minutes or until brown and crisp.
10.) Flip and cook other side (approximately 3 minutes).
11.) Turn out onto cutting board and slice like pizza.
12.) Serve with dollop of crème fresh and sprinkle with chives.
