Neighborhood Joints: Cafe SuperNatural
Chef Ian Brandt tells us about his new cafe, and shows us a homemade hummus recipe.                     

Cafe SuperNatural Raw Cashew-Zucchini Hummus

1 large zucchini or 1 1/2 medium zucchini (peeled)
1/2 cup raw cashews
2 Tablespoons Olive Oil
2 Tablespoons Tahini
3 Tablespoons fresh lemon juice
1/2 Tablespoon sea salt
1 large clove garlic (minced)
Dash of white pepper

Place all ingredients (except cashew) in blender and blend till smooth
Add cashew and continue to blend till velvet smooth.

Serve with fresh olive oil and olives with a paprika and parley garnish
with fresh vegetables and crackers or crostinis
