Brio's Tuscan Chicken Salad - Special guest Carly Cash from KBull93 (kbull93.com
) helps Brio Chef Josh Laquet make this summery dish. Ingredients:
4 oz shaved chicken, slicked
1 oz lemon vinaigrette brio
5 oz batch, tricolor mix w arugula
Roma tomato wedges
Tomatoes, yellow grape quartered
1 TBSP, julienned basil
2 oz tuscan italian dressing
1 pinch batch, salt & pepper mix
1/2 oz crispy lavoush bravo
1/2 tbsp batch, grated reggiano
Drizzle balsamic glaze
Bruschetta bread Directions:
1.) In a saute pan place chicken and 1 oz lemon vinaigrette, heat. Place bruschetta bread in oven and heat
2.) In a mixing bowl, combine tricolor, Roma tomatoes,yellow grape tomatoes, Kumato tomatoes, basil, Tuscan vinaigrette, salt and pepper. Toss to combine.
3.) Add heated chicken and crispy lavoush in bowl and toss to combine.
4.) Place salad in a room temperature rimless bowl, towering the center.
5.) Garnish with Reggiano and balsamic glaze.
6.) Place warmed bruschetta bread around the salad.
