Snowbird's Steak Pit restaurant gives us new choices for charring.Dry Rub Ingredients:
2 T ancho chile powder
2 t Spanish paprika
2 t ground coriander
2 t dry mustard
2 t ground dried oregano
2 t ground cumin
1 t salt
1 t pepperDirections:
1.) Combine all ingredients and whisk together thoroughly. Add more salt if needed. Store in an airtight container. Popular Marinade Ingredients:
1/3 cup soy sauce
½ cup olive oil
1/3 cup fresh lemon juice
¼ cup Worcestershire sauce
1 ½ T garlic powder
3 T dried basil
1 ½ T dried parsley flakes
1 t ground white pepper
¼ t hot pepper sauce (optional)
1 t dried minced garlic (optional)Directions:
1.) Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender.
2.) Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
3.) Pour marinade over desired type of meat. Cover and refrigerate meat for up to 8 hours. Cook meat as desired.Teriyaki Marinade Ingredients:
1 oz. green onion
1 oz. fresh ginger root
1/3 oz. fresh garlic
1 2/3 cup soy sauce
2 T sherry
1 1/3 oz. brown sugar
1 1/3 oz. white sugar Directions:
1.) Combine all ingredients in a food processor and blend.
2.) Then pour into a saucepan and bring to a boil on stove top.
3.) Cool overnight in the refrigerator. Use as needed. If strained, this marinade may also be used as a sauce.
