Coconut Ambrosia
Chef Joe makes a spin on a sweet classic, using creamy coconut milk instead of sour cream or mayonnaise. Make this recipe with regular or light coconut milk.
Ingredients:
1/2 cup light or regular coconut milk
3 tablespoons sugar
1/4 teaspoon vanilla extract
1 teaspoon tangerine or orange zest
1/2 cup roughly chopped toasted walnuts
1/2 cup mini marshmallows (optional)
1 apple, cored, seeded and cut into 1/4-inch thick slices
1 tablespoon lemon juice
3 to 4 tangerines, peels and pith removed, roughly chopped
2 to 3 large oranges, peels and pith removed, roughly chopped
2 tablespoons roughly grated coconut, toasted
In a large bowl, whisk together coconut milk, sugar and vanilla until smooth. Stir in zest then toss in walnuts and marshmallows if using. Toss apples with lemon juice, then add to bowl with coconut milk mixture. Add tangerines and oranges and toss gently to coat. Cover and chill for at least 1 hour, then garnish with coconut and serve cold.
