Grandma Steward’s Peach Pie
Miss Brigham City Madisan Brook’s Grandmas Pie:
1 box of vanilla wafers
1 pint of heavy whipping cream
1 can sweetened condensed milk
¼ cup of lemon juice
4 ripe peaches skinned and sliced
Crush approximately 2 cups of vanilla wafers and place in the bottom of a 9 inch pie plate. Place the remaining whole cookies around the edge of the pie plate. Set aside.
Mix heavy whipping cream until stiff. Fold in ¾ to 1 can of sweetened condensed milk (depending on how sweet you would like your pie to be). Add ¼ cup of lemon juice. Fold gently.
Place half of the fresh peaches on top of the crushed vanilla wafers in the pie plate. Add a layer of the cream mixture. Add another layer of peaches and then add the last of the cream mixture.
Top with some vanilla wafer crumbs and add a couple of sliced peaches for decoration.
Refrigerate and Enjoy.
