Waldorf Astoria
RECIPE: Roulade of Stuffing, Apple, Walnut & Sausage   
Ingredients
- 3 Ibs                             Ground pork- 4 Tbsp                          Paprika- 1 teaspoon                   Cayenne pepper- 2 cup                            Bread crumbs- 1 Sprig                         Rosemary- 1 teaspoon                   Garlic powder- ¼ cup                           Chopped parsley- 1 each                          Sliced caramelized onion- 2 each                          Dice and roasted granny smith apple- 2 cup                            Candied walnut- To Taste                       Kosher Salt- To Taste                       White Ground Pepper

Directions
In a bowl, mix all ingredients evenly. Divide your mix in 2, roll it in a cylinder shape. Wrap it in plastic wrap first, then in foil. Bake it at 250 degrees for 45 minutes. Slice and serve with Gravy.


RECIPE: Chestnut Gravy
Ingredients
- 2 oz.                 Butter- 1 #                    Chestnut- 4 Tbsp.             All Purpose flour- 2 quart             Chicken stock- 1 cup                Diced white onion- To Taste           Kosher Salt- To Taste           White Ground Pepper

Directions:Sauté in the butter the onion, add the flour and slowly add the chicken stock and the chestnut. Cook for 10 minutes at low heat. Blend and put thru a strainer.
