(KUTV) A Utah County man gives up a successful computer programming career to follow a dream; the dream of becoming a chocolate maker.
Art Pollard has the sweetest job ever! He makes chocolate, in fact his Amano chocolate is world-renown winning and has been the best in state for several years running. This labor of love has earned more than 150 first place national and international awards. Yet you'd never know it by his simple and unassuming shop located in Orem, Utah.
Art's story is a unique one; he was a BYU computer science major and a food junkie. His desire to make his own chocolate was awaken in him while he was on his honeymoon; he ate an incredibly delicious chocolate truffle and he knew what he wanted to do with his life. He then spent 10 years of research and experimentation on how to make the best chocolate. Seven years ago he started his Amano chocolate company.
Art travels the world to get the perfect beans for his chocolate. He says it's the beans that make all the difference. His vendors are some of the top growers in the world. Right now this includes eight different farms located in the Dominican Republic, Ecuador, Madagascar, Papua New Guinea, and Venezuela.
Once the beans arrive at his facility, they are sorted, cooked and dumped into a cooler. Once ready they're put into an old mahogany and maple machine where the shells are stripped off and the beans. They are then put into a grinder where they eventually turn into liquid chocolate.
Some of the equipment he's using dates back to the mid 1900's. He says that old fashion cooking is why it's so good. Each batch of beans from different parts of the world makes a different flavor.
Art currently produces nine flavors; his bars are sold at specialty shops and also grocery stores like Harmon's.
