Grain Mustard Spaetzle

12 oz Milk
Salt and White Pepper
2 T Grain Mustard
24 oz Flour
1.) Combine the eggs, milk, salt, pepper and mustard in a large bowl and mix well.
2.) Work in the flour by hand or a rubber scraper.
3.) Let the dough rest for about 10 minutes.
4.) Scrape the dough through a perforated pan into lightly salted boiling water. Simmer until the Spaetzle float.
5.) Remove them with a slotted spoon and move into ice water for one minute. Drain well.
