1 ½ cups powdered sugar
7/8 cup almond flour
1/2 cup egg whites -- room temperature
2 tablespoons granulated sugar
3 drops food coloring
1 cup butter, at room temperature
1/2 cup powdered sugar
1 tablespoon heavy cream
1/4 teaspoon flavoring (vanilla, raspberry, etc.)
1.) Pre-heat oven to 300 degrees
2.) Stir together the powdered sugar and the nuts and sift twice through a wire strainer.
3.) In a mixer, whip the egg whites until frothy.
4.) Add the sugar and food coloring and whip until stiff.
5.) Fold in the almond mixture 1/3 at a time.
6.) Spoon into a pastry bag with a round tip.
7.) Pipe onto a baking sheet lined with parchment into quarter size discs 1/2" apart.
8.) Bake until very light brown, about 17 minutes, depending on your oven.
9.) Let cool and peel from the parchment.
10.)Frost 1 with butter cream and top with another.
