Italian Style Sausages And Peppers

6 bell peppers, sliced in strips (preferably red, yellow and green)
2 yellow onions, sliced
4 cloves fresh garlic, minced
6 links Italian sausage (hot or mild, to suit your taste)
Salt and pepper
Extra virgin olive oil
1.) Coat the bottom of a 9x12 baking pan with olive oil
2.) Arrange peppers, onions and garlic in pan. Sprinkle liberally with salt and pepper. Add a little more oil to the top, then use your hands to mix everything together evenly.
3.) Place whole sausage on top of peppers, cover with aluminum foil and bake for 30 minutes at 350.
4.) After 30 minutes, remove foil, turn the sausage, stir peppers and cook another 3-45 minutes or until sausage and peppers are browned. Sausage should reach a temperature of at least 165.
5.) When finished cooking, remove sausage to a cutting board and slice in diagonal slices. Return to the pepper pan and mix everything together.
6.) Serve over rice or a warmed hoagie roll with provolone or mozzarella cheese.
