Whiskey Peach BBQ Sauce

1 Cup Onion, diced
3 Cloves Garlic, minced
1 teaspoon Coriander
1 teaspoon Cumin
1 teaspoon Caraway seed
1 teaspoon Mustard seed
1 teaspoon Paprika
½ Cup Apple Cider Vinegar
1 28oz Can Fire Roasted Tomato
2-3 Tablespoons Molasses
1/3 Cup Brown Sugar, packed
2 Cups Peaches
½ to 1 Cup High West Whiskey
1 Jalapeno, seeded
1.) Sauté Onion and garlic with small amount of oil for 3 minutes
2.) Add spice mixture and heat until fragrant. Deglaze pan with Apple cider Vinegar, and allow cooking for 2 minutes.
3.) Add Roasted Tomatoes, Brown sugar and molasses. Continue to cook, stirring occasionally on low heat for 2 hours. Puree until smooth
4.) Peel and Dice Peaches. Sauté peaches and Jalapeno until juices are released and peaches start to break down.
5.) Deglaze with whiskey and allow cooking for 20 minutes. Lightly puree to desired consistency.
6.) Combined both sauces and heat thoroughly. Season with salt and vinegar if needed.
