Cashew Orange Chicken

3 whole, boneless chicken breasts, cut into small bite size pieces
1 cup flour
1 tbsp freshly grated ginger
2 tbsp orange concentrate
3 drops orange oil
2/3 cup soy sauce
2 tbsp corn starch
1/2 c. cashews, roasted salted 4 cloves garlic, minced
1 medium onion diced
1/3 cup diced bell peppers
Salt and Freshly cracked pepper
1.) Heat peanut oil up in wok.
2.) While oil is heating dredge chicken in flour.
3.) Once oil is hot, place chicken into oil and sauté until cooked.
4.) Add minced garlic, diced onion, bell peppers and carrots and sauté.
5.) Mix soy sauce, orange concentrate, orange oil and corn starch. Mix together.
6.) Add soy sauce mixture and stir until thickened and coating chicken.
7.) Serve over rice.
