Rice Crepes with Blackberry-Agave Syrup and Yogurt

1 Cup Rice Milk
1 ½ t Egg Substitute
2 T Water
2 T Applesauce
1 T Agave
2 t Olive Oil
1 Cup Brown Rice Flour
1 t Baking Powder
½ t Baking Soda
¼ t Salt
1.) Whisk together the first six ingredients in a bowl.
2.) In a separate bowl, mix the remaining for ingredients together.
3.) Pour the wet ingredients into the dry and stir until just smooth.
4.) Cover and refrigerate for at least 20 minutes.
5.) Spray a non stick pan over medium-high heat and spoon in just enough batter to coat the bottom of the pan.
6.) Once bubbling, give it a flip and finish cooking the other side.
1 Cup Blackberries
¼ Cup Agave
¼ Cup Water
1 t Vanilla
1.) Combine all ingredients in a small sauce pan.
2.) Bring to a simmer and continue cooking until the liquid reduces by about ½.
3.) Crush the blackberries a bit with the back of a spoon and serve.
4.) To assemble the crepes, fill them with 1 tablespoon of yogurt and 3 tablespoons of fresh berries. Fold them over and top them with another tablespoon of yogurt and a few more fresh berries. Drizzle the plate with the Blackberry-Agave syrup and serve.
