Chef Bryan's Tahitian Chicken

4 boneless skinless chicken breasts
1 tbsp sugar
1 tbsp brown sugar
2 tsp corn starch
¼ cup rice vinegar
3 tbsp soy sauce
2 garlic cloves minced
¼ cup minced onion
2 tsp freshly cracked pepper
1.) In a medium size mixing bowl, combine sugar, brown sugar, and corn starch. Whisk together to combine.
2.) Add rice vinegar, soy sauce, garlic, onion, and pepper. Mix all ingredients together. Set aside until ready to use.
3.) Heat a large oven proof fry pan on the stove. Add about 1 tbsp butter to the pan and sear the chicken breast for about 3 minutes on each side.
4.) Pour the soy sauce mixture over the chicken and place in a 350 degree oven for about 20 minutes or until the internal temperature of the chicken is 165 degree’s.
5.) Serve over rice and enjoy!
