Red Snapper Veracruzana

8-10 ozs of red snapper filet
1 Tbsp EVO
½ tsp chopped garlic
4 Tbsp diced fresh tomatoes
2 Tbsp diced green olives
2 Tbsp diced red onion
1 tsp capers
½ tsp pickled jalapeno peppers
Pinch of dried oregano
Pinch of fresh chopped parsley
Fresh Ground Black Pepper to taste.
1.) Take your filet or filets of red snapper and dredge through blackened seasoning.
2.) Sauté in 1 Tbsp hot olive oil until fish is cooked to you level of doneness.
3.) Remove fish from pan and place on serving dish keeping as much oil in the pan as possible.
4.) Place red onions and garlic in pan on medium to high heat. Saute for 30 seconds before adding the tomatoes, olives, capers, oregano, jalapenos, parsley, & pepper. Stir fry quickly for one more minute over medium high heat and pour salsa over the fish.
5.) Serve over rice with fresh green beans and it's ready to enjoy! Garnish with fresh lime wedges.
