Key West Salmon and Jasmine Rice

Key West Salmon Instructions:
1.) Preheat oven to 350 degrees and remove lid, bags and parchment from pan.
2.) Before cooking, pour 1/2 of sauce over salmon.
3.) Bake salmon uncovered 20-25 minutes, or until fish is flaky and done in center (minimum internal temperature 145F).
Grill Option: Cook salmon on preheated grill 5-8 minutes per side, or until fish flakes with a fork.
Jasmine Rice Instructions:
1.) Rinse rice, place in saucepan, add 1 1/4 cups water.
2.) Bring to boil, cover, turn heat down to the lowest setting. Simmer 20 minutes or until rice is tender. Remove rice from heat.
3.) Stir in remaining sauce and allow to sit, covered, for at least 10 minutes.
4.) Sprinkle salmon and rice with toasted coconut, and then serve.
