Classic Vanilla Mallows

Marshmallow Coating Ingredients:
1 ½ cups powdered sugar
1 cup corn starch
Marshmallow Coating Directions:
1.) Sift together powdered sugar and corn starch
Classic Vanilla Mallows Ingredients:
4 ½ teaspoons unflavored powder gelatin
½ cup cold water
¾ cup sugar
½ cup light corn syrup (divided into ¼ cups)
¼ cup water
1/8 teaspoon salt
2 teaspoons vanilla extract or other flavoring
Classic Vanilla Mallows Directions:
1.) Lightly coat an 8-by-8 inch baking pan with cooking spray and then sprinkle with marshmallow coating (see above).
2.) Whisk together the gelatin and cold water in a small microwaveable bowl and let “bloom” for 5 minutes.
3.) Combine the sugar, ¼ cup corn syrup, water and salt in a saucepan over high heat. Boil until mixture reaches 240 degrees or soft ball stage.
4.) Pour the remaining ¼ cup corn syrup into the bowl of an electric mixer fitted with the whisk attachment.
5.) Microwave gelatin on high until completely melted (about 30 seconds). Pour it into the mixer bowl with the corn syrup and set the mixer speed to low and keep it running until the syrup mixture is ready.
6.) When the syrup reaches 240 degrees, slowly pour it into the mixer bowl. Increase the speed to medium and beat for 5 minutes. Increase the speed to medium-high and beat for 5 more minutes. Beat on the highest setting for approximately 1 minute and beat in your desired flavoring. The marshmallow will be opaque white, fluffy and tripled in volume.
7.) Pour into the prepared pan using an offset spatula to smooth into corners (spraying the spatula with cooking spray will keep it from sticking). Sift coating evenly and generously on top. Let stand in a cool, dry place for at least 6 hours.
8.) Cut mallows into desired shapes (a pizza cutter is great for squares). Dip the sticky edges of the mallows in more coating and pat off the excess.
