2 oz 80/20 Oil
½ oz Garlic, Minced
½ oz Shallots, Minced
½ oz Jalapenos, Sliced
6 oz Chicken Breast, Diced
2 oz Red Onions, Julienne
2 oz White Wine
6 oz Heavy Cream
1 oz Smoked Mozzarella
6 oz Penne Pasta
Salt and Pepper To Taste
Fresh Chopped Herbs
Roasted Red Pepper Oil
1.) Take a medium sauté pan and place it over medium high heat. Add oil, garlic, and shallots. Sweat for one minutes, do not let brown.
2.) Add jalapenos, chicken, and red onions. Continue to cook for a few minutes. Deglaze the pan with white wine.
3.) Add cream and let reduce by half. Add the smoked mozzarella. In the meantime take your pasta and cook it off.
4.) Add cooked pasta to the sauce, mix together and place in bowl. Top with a garnish of fresh herbs, asiago cheese, and roasted red pepper oil.
