Greek Salad Couscous

1 cup couscous
1 cup boiling water
1 Tbs. olive oil
2 roma tomatoes finely diced
1 large cucumber peeled, seeded and finely diced
1 small red onion finely diced
1 cup feta cheese crumbled
¼ cup Kalamata olives seeded and sliced
Combine the above ingredients in a bowl and mix with the couscous once it has cooled.
Ingredients for the dressing:
1/8 cup olive oil
1/8 cup freshly squeezed lemon
1 Tbs dried oregano
Salt and pepper to taste
1.) To make the couscous, place the couscous in a bowl. Bring 1 cup of water to a boil and pour over the couscous. Pour the olive oil and stir.
2.) Cover and let stand for 5-7 minutes. After it's cooked fluff it with a fork and set it aside and let cool.
3.) Pour the dressing over the salad, toss and serve
