Father's Day Breakfast

Oatmeal Pancakes Ingredients:
2 cups rolled oats
2 cups buttermilk
1/2 cup unbleached All-Purpose flour
1 Tbsp sugar
1 Tsp baking soda
3 large eggs lightly beaten
3 Tbsp butter, melted
1.) Combine oats and buttermilk and allow to soak for at least 30 minutes.
2.) Sift together flour, sugar, and baking soda.
3.) Stir in the oats mixture- add the eggs and melted butter and beat until well incorporated.
4.) Grease a hot skillet preferably cast iron.
5.) Measure about a ¼ cup and cook until browned and flip. Serve warm.
Quick Orange Crème Fraiche Ingredients:
1 pint heavy whipping cream
1/2 cup sour cream
1/4 cup sugar
Juice of half an orange
Zest from orange
1.) Whip cream to soft peaks and add sugar.
2.) Whip to stiff peaks and fold in zest, sour cream, and orange juice until just incorporated.
3.) Keep chilled
Macerated Berries Ingredients:
1 pint blackberries
1 pint raspberries
1 splash Cointreau or Sherry (may be omitted, but hey…it’s Father’s Day)
2 tablespoons granulated sugar or bakers sugar
Chopped fresh mint to garnish
1.) Place berries in a bowl with sugar and liquor and toss until berries are coated.
2.) Let sit until the sugar has dissolved and the berries have expelled some juice.
3.) Serve and garnish with mint.
