Grilled Shrimp with Fajita Rice

2 teaspoons olive oil
1/2 teaspoon cumin
1/4 cup chopped red onion
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/4 cup canned black beans, rinsed & drained
3/4 cup cooked brown rice
2 ounces (10 large) frozen uncooked shelled shrimp, thawed
1 Tablespoon fresh lime juice
2 Tablespoons chopped green onions
1.) Heat outdoor grill or use grill pan on stovetop. In skillet, sauté oil, cumin, onion and peppers for 5 minutes. Add black beans and cooked brown rice and sauté an additional 3 minutes until warm.
2.) Grill shrimp for 2-3 minutes on each side or until internal temperature of 145 degrees F.
3.) Drizzle shrimp with lime and serve on rice mixture. Top with green onion.
