Barbeque Beef Sandwiches with Mango and Apple Salad

1 beef roast
2 tablespoons brown sugar
0.75 cup ketchup
3 tablespoons minced onions
1 teaspoon salt
2 teaspoons vinegar
2 teaspoons Worcestershire sauce
1. Combine all ingredients in slow cooker and cook on low 6-8 hours or high 4-6 hours. If you don’t have all day, use sliced roast beef already cooked and mix sauce ingredients in sauce pan and heat until boiling. Add meat to sauce pan and simmer 15 minutes. Serve on hamburger buns or rolls.
Mango and Apple Salad
1 apple, cored and diced
1 tablespoon balsamic vinegar
0.75 cup cashews, toasted
0.5 teaspoon cinnamon
0.25 teaspoon ginger
1 mango, peeled and cubed
1. Combine vinegar, cinnamon and ginger in a bowl and whisk until well combined.
2. Toss mango, apple and cashews together in serving bowl and drizzle with dressing. Gently stir together. Should be served promptly so apples don’t brown.
