1 pound of spinach de-stemmed and washed, drained thoroughly and chopped in one inch pieces.
One bunch of green onions chopped (the good green stem chopped along with it)
quarter pound of feta cheese
quarter pound of parmesan cheese
8 ounces ricotta cheese
half a pack of phylo.
Quarter pound of butter
2 tbsp olive oil
8x12 baking dish
1.) Melt a quarter pound of butter with 2 tablespoons olive oil.
2.) Prepare spinach and let it drain. Shred and crumble all cheeses and mix well, add eggs and 2 tablespoons of olive oil mix thoroughly. Add chopped green onions to the cheese mixture, add spinach, mix thoroughly, add salt pepper to taste. Put aside.
3.) Prepare baking dish with butter. Line dish with 5 layers phylo over lapping edges. Butter each layer with butter and oil mixture. Add filling then put the edges of phylo on top of the filling then wrap it on top.
4.) Butter the top then put five more sheets on top and butter each layer. Score serving size pieces on top (don't score into filling). Then bake 30 to 40 minutes until puffy and golden brown, ready to serve.
