Pumpkin Caprese Salad

1 lbs Fresh Pumpkin (Seeded, Peeled and Diced)
1 oz blended Olive Oil
2 oz Agave Nectar
Salt & Pepper
Pre-heat oven to 350 degrees. Toss above ingredients well and place on a sheet pan. Roast Pumpkin in over for 35-40 minutes until tender. Set aside to cool.
Roasted Pumpkin (recipe above)
1 lbs Fresh Mozzarella Cheese
Pumpkin Vinaigrette (recipe below)
Combine all ingredients in a bowl, toss well and serve on a buffet or as a plated salad
cup Apple Cider Vinegar
cup Brown Sugar
1 tablespoon Chopped Basil
3 cloves Fresh Garlic Minced
2 tablespoons Pumpkin Seed Oil
1 cup blended Olive Oil
Salt and Pepper to taste
Mix all ingredients together then add Pumpkin Seed Oil and Blended Olive Oil slowly whisking continuously.
