Rigatoni with Cinnamon Tomato Sauce

1 cinnamon stick
1 teaspoon ground Cinnamon
2 cans Diced Tomatoes, 14 oz. size
3 cloves Garlic, minced
4 ounces Goat Cheese
1/2 cup Grape Juice
1/4 cup Olive Oil
1 medium Onion, diced
3/4 cup Parsley, dried
2 teaspoons Red Pepper Flakes
1 pound Rigatoni Pasta
1 teaspoon Salt
1 teaspoon Sugar
1. Bring a pot of salted water to a boil. Add rigatoni and cook according to package directions.
2. Meanwhile in a large pan heat olive oil over medium-high heat. Add onion and cinnamon stick. Saute onion until tender and translucent, about 3 minutes. Add tomato paste, parsley, salt, red pepper flakes, garlic, oregano, cinnamon and sugar. Stir to combine all ingredients.
3. Add grape juice and bring to a boil. After about one minute add canned tomatoes and reduce heat to a simmer. Let simmer about ten minutes until sauce is thick.
4. Drain and rinse pasta and gently fold into sauce. Add goat cheese to top and serve immediately.
