Sliced Fennel and Orange Salad

1 fennel bulb
1/4 cup fresh orange juice
2 large navel oranges, peeled and segmented
2 tbsp honey
2 tbsp freshly chopped mint
extra virgin olive oil
salt and pepper to taste
1.) Cut off the top leafy parts and the bottom root end of the fennel bulb.
2.) Cut the fennel into thin slices and arrange them on a serving platter.
3.) Combine the orange juice, honey and mint in a small bowl and mix together to combine.
4.) Carefully arrange the orange segments over the fennel slices and spoon the orange juice dressing over the salad.
5.) Drizzle some olive oil over the salad, sprinkle with salt and pepper. Served chilled. Enjoy!
