Three eggs, beaten in a small bowl
2 oz. applewood smoked bacon, julienned
1 oz. diced Roma tomatoes
½ oz. diced green onions
1 oz. shredded cheddar cheese
½ avocado, diced
Salt and pepper
1.) Lightly coat a sauté pan with non-stick cooking spray and heat. Add cooked bacon and sauté until it begins to sizzle.
2.) Add the diced tomatoes and green onions and cook for 30 seconds. Add the eggs and two shakes of salt and pepper.
3.) Stir the eggs in a figure eight motion until almost fully scrambled. Add the diced avocado and shredded cheddar.
4.) When fully cooked, move to a plate and top with a slice of avocado.
