1 dozen eggs
8 oz. cream cheese
1 cup of crumbled bacon
1 white onion
1 can of diced green chilis (mild)
2 cups of grated cheddar cheese
2 cups of grated potatoes
Garlic, onion, basil, cumin, salt to taste
1.) Cook the potatoes in a few tablespoons of butter or olive oil, until it becomes one big hash brown.
2.) Whip the eggs in a bowl, then grate in the cream cheese (It helps if you freeze it for an hour or so.)
3.) Add the seasonings, mix again, then pour over the hash browns.
4.) Turn the heat down so the eggs on the bottom don't burn.
5.) As it cooks slowly, sprinkle the bacon and chilis in, so they sink into it a little.
6.) Cook on the stove top until the eggs firm up for the most part. (Not all the way done!)
7.) Place thinly sliced onions and tomatoes on top.
8.) Broil for about five minutes, then sprinkle cheese over the top, and broil until it melts and turns a little crispy.
