Canyon Pepper Steaks

7 oz. Beef Tenderloin
2 oz. Brandy
3 oz. Mango Chutney
1.) Season tenderloin with salt and pepper. Lightly encrust tenderloin with cracked peppercorns.
2.) Sear both sides of tenderloin in a medium-hot skillet.
3.) Finish tenderloin in oven for 3-5.
4.) Deglaze the pan with 2 oz. of brandy. Add 3 oz. of mago chutney and stir until hot.
5.) Return steak to pan to lightly glaze beef.
