Avocado Chicken Salad
As Aired On June 1, 2012

2tbs olive oil
2tbs fresh lime juice
Fresh ground black pepper
2 cups chicken meat, fresh grilled, shredded
1/4 cup cilantro, fresh and chopped
3/4 cup pico de gallo salsa, fresh
1 each avocado, ripe, peeled and chopped
3 oz. Tortilla chips
1.) Combine the first four ingredients in a medium mixing bowl, stirring with a whisk.
2.) Add cilantro and chicken, toss to combine.
3.) Gently fold in the salsa and avocado
4.) Serves 4, eat with chips.
