Submarine Sandwich with Sun Dried Tomato Mayonnaise

Sun Dried Tomato Mayonnaise
1 egg yolk
1 tbsp fresh lemon juice
1 tsp dried mustard
1 tsp sugar
1/2 tsp salt
1/4 cup finely minced sun dried tomatoes
1 cup canola oil
1.) Add the egg yolk, lemon juice, mustard, sugar, salt, and sun dried tomatoes to your blender or food processor. Pulse together.
2.) With the machine running, slowly drizzle in the canola oil to form a thick emulsion.
3.) Remove the mayonnaise from the blender or food processor and refrigerate until ready to use.

1.) Cut the baguette in half lengthwise and spread bottom half with sun dried tomato mayonnaise.
2.) Layer with deli meats, cheese, lettuce, onions, and tomatoes. Salt and pepper to taste.
3.) Use any additional sandwich fixing desired.
4.) Replace the top half of the baguette and cut into serving sizes. Enjoy!
