Klondike Goldust Potato Curry Croquettes

2 pounds Klondike Goldust potatoes, cut into pieces
12 ounces lean ground beef, cooked and cooled
1/2 cup green peas, cooked
1/2 chopped diced carrots, cooked
1 tbsp curry powder
1/4 cup diced onion
2 cups flour
2 cups panko bread crumbs
salt and pepper to taste
oil for deep frying
1.)Place the prepared Klondike Rose potatoes into a pot and cover with cold water. Bring to a boil and reduce the heat to a simmer. Continue cooking until they are fork tender.
2.)Drain potatoes and mash.
3.)Mix in cooled cooked meat, peas, carrots, curry powder and onion.
4.)Heat the oil to about 350 degree’s.
5.)Place the flour in a large open face plate for dredging. Whisk the eggs
in a large bowl. Place the panko (Japanese style bread crumbs) in a large open face place for dredging.
6.)Once the potato mixture is combined, form 10-12 patties. Dredge the patties in the flour, egg, and finally the panko bread crumbs.
7.)Place the prepared croquettes in the preheated oil and deep fry until golden brown.
8.)Remove the croquettes and drain on some paper towels. Serve with your favorite condiments and enjoy.
