Ginger Marinated Pork Loin with Cucumber Salad

1 pork loin (about 1 pound)
2 tsp freshly grated ginger
½ cup soy sauce
¼ cup sake (or 1 tbsp rice vinegar)
1 tbsp sugar
Extra virgin olive oil
1.) Thinly slice pork loin and set aside.
2.) In a medium size bowl, combine freshly grated ginger, soy sauce, sake (or rice vinegar) and sugar. Whisk together.
3.) Add the pork into the marinade and allow to marinade for about 10 minutes.
4.) Heat a large sauté pan and add just enough oil to lightly coat the pan to prevent sticking.
5.) Pan sear prepared pork loin for about 3-4 minutes on each side or until thoroughly cooked through.
6.) Serve with cucumber salad. Recipe below.
2 medium size cucumbers
1/3 cup rice vinegar
2 tsp soy sauce
2 tbsp sugar
1.) Peel and deseed cucumbers. Cut cucumbers in julienne slices and place in a bowl of 4 cups water and 2 tsp salt. Allow to soak for about 10 minutes.
2.) While cucumbers are marinating, combine rice vinegar, soy sauce, and sugar in a small bowl and whisk together.
3.) Drain and rinse cucumbers, squeeze excess liquid from cucumbers.
4.) Toss with dressing and serve. Garnish with sesame seeds.
