Hoisin Pork with Noodles and Vegetables

1 package udon noodles
1/4 cup hoisin sauce
2 tbsp sweet chili sauce
1/2 pound pork strips for stir frying
1 large onions, sliced
2 garlic cloves, minced
2 cups snow peas
2 cups chopped bok choy
1 cup chopped carrots
1 red bell pepper, thinly sliced
salt and pepper to taste
1.) Prepare the noodles as directed on the package.
2.) In a small bowl, combine the hoisin sauce and sweet chili sauce. Mix together and set aside.
3.) Heat your wok or a large saute pan on the stove. Add just enough oil to lightly coat the bottom of the pan. Stir fry the pork strips in two batches and cook until cooked through and brown (about 4 minutes). Remove the cooked pork and set aside.
4.) Add additional oil if needed into your hot wok or saute pan and add the onion and garlic. Stir fry or saute until fragrant. Add the snow peas, bok choy, carrots, and red pepper. Stir fry or saute for about 1 minute.
5.) Add the hoisin sauce, cooked noodles, and pork to the wok or saute pan and cook for an additional minute.
6.) Divide into 4 bowls and enjoy!
