Blackened Mahi Mahi Tacos

1 lb Mahi Mahi Filet, cut into strips
3 Tbs Cajun Spice
2 Tbs Canola Oil
16 Corn Tortillas
2 Cups Cabbage, finely shredded
¼ Cup Nonfat Yogurt
2 Limes, zested and juiced
1 tsp Chili Powder
¼ tsp Cumin
Salt and Pepper, to taste
1.) In a medium mixing bowl, whisk together the yogurt, lime juice and zest, chili powder, cumin, and salt. Toss in the cabbage and set aside.
2.) Heat a cast iron skillet over medium high heat. Add the oil.
3.) Dredge the fish in the Cajun spice and carefully place in the pan. Cook, turning once, a total of only about 3-4 minutes.
4.) Meanwhile, stack the tortillas on a plate and cover completely with plastic wrap. Microwave for 1 1/2 minutes and let sit 2 minutes. Place the fish in the tortillas and top with salsa and cabbage.
Fire and Ice Salsa
3 large fresh tomatoes
1/3 cup white onion, diced
1/4 cup fresh orange juice
1 each habanero chile
1 tablespoon lime juice
1/2 teaspoon salt
2/3 cup cucumber, peeled, seeded, and diced fine
2/3 cup red radish, diced fine
2/3 cup jicama, diced fine
1/3 cup cilantro, chopped
3 tablespoons fresh mint, chopped
1.) Combine all ingredients in a large mixing bowl and refrigerate for 30 minutes before serving.
