Fresh Apple Tartlets

Yields 3-4 Tartlets
Pasta Frolla (Tartlet dough)
2 cups All Purpose Flour more for rolling out
1 tsp salt
2 Tbls Sugar
Zest of 1 orange
½ cup butter (cold, in small cubes)
1 tsp vanilla
¼ cup cream
1.) In a small bowl, mix together the dry ingredients and orange zest. Add the butter and break up with your hands or a fork until it is the consistency of small peas.
2.) Add egg, vanilla and cream. Mix just until together.
6 Granny Smith Apples, cut into 1/2" slices
1/4 c Sugar
1 tsp Cinnamon
Zest of 2 Oranges
½ tsp Ginger
¼ tsp Vanilla
1.) Combine all ingredients and put them into an oven safe pan. Cover with aluminum foil and cook at 350 until tender, about 15 minutes. Chill.
2.) Roll out frolla dough until about ¼" thick. Cut slightly larger than the tartlet shell, place in shell, pushing down into corners. Fill with apples.
3.) Cut strips of dough for lattice top and weave. Place on top of the apples. Using a rolling pin, roll the already weaved lattice on top so that the corners of the lattice are cut off at the edges of the tartlet shell.
4.) Bake at 350F for 25 minutes or until dough is fully cooked.
