Homemade Pasta Sauce

12-14 Small/Medium Ripe Tomatoes
6 oz can of basil, oregano and garlic tomato paste
1/4 cup Olive Oil
1.) Wash and dry 12 - 14 small/med ripe tomatoes.
In a large sauce pan, heat one 6oz can of basil, oregano and garlic tomato paste with
¼ cup of olive oil.
2.) Cut the top of the tomatoes off. Deseed tomatoes by holding upside down over a bowl and inserting finger in each section of the tomatoes. Cut up tomatoes and add to olive oil mixture long with one Bay Leaf.
3.) Cover and simmer over medium/low heat for 25 minutes. Stir occasionally.After 25 minutes, using a potato masher, mash the tomatoes in the pot.
Add to the tomato mixture:
¼ cup of red wine
2 T Oregano
1T Italian Seasonings
1 t Onion Powder
1 t Garlic Powder
1 t Sugar
1 t Sage
Salt and pepper to taste
1.) Stir all ingredients and mash the mixture.
2.) Simmer on low 45 minutes, stirring and mashing occasionally.
