New York Italian Pizza

For the Dough:
2 cups water
2 tsp yeast
1/4 cup extra virgin olive oil
1 1/2 tbsp sugar
2 tsp salt
5-6 cups flour
Pizza sauce (your choice)
Fresh mozzarella cheese, sliced
red bell peppers, sliced
green bell peppers, sliced
yellow onion, sliced
(use any toppings you want)
1.) Add the water, yeast, olive oil, and sugar to a bowl. Mix together and let it sit for 10 minutes.
2.) Add the salt and 4 cups and mix together. Add just enough of the remaining flour to pull it together into a soft dough.
3.) Knead the dough, dusting with flour to prevent it from sticking to your fingers. Once the dough is smooth, place is a large bowl that has been drizzled with olive oil. Roll the dough around in the bowl to coat it with olive oil, cover and let the dough double in size.
4.) Once the dough has risen, measure out about 15 ounce portion or dough. Shape into a circular shape using your hands or a roller. Place the dough in the oven and partially bake it. Partially baking the dough gives you a crispy crust.
5.) Place the sliced mozzarella cheese on the newly prepared pizza dough and starting from the outside edge, drizzle the pizza sauce in a “bullseye” pattern moving towards the center of the pizza. The sauce is is placed on AFTER the cheese. The emphasis is placed on the great cheese and not the sauce.
6.) Arrange the remaining toppings on the pizza and brush the crust edges with extra virgin olive oil and drizzle a little on the pizza. Bake in a 500 degree oven for about 5-8 minutes or until the cheese is bubbling.
7.) Remove from the oven, and top with freshly chopped basil. Enjoy!
