Glazed Salmon With Rice and Broccoli

1/4 cup brown sugar
2 tbsp soy sauce
1 cup rice
2 cups broccoli florets
1 red onion, sliced
Extra virgin olive oil
Salt and pepper to taste
1.Turn the broiler on in your oven. In a small bowl, whisk together the soy sauce and brown sugar. Set aside.
2.Cook the rice according to the directions and add the broccoli during the last few minutes of cooking. When the rice is cooked, simply cover and set the rice pan with the broccoli aside for about 5 minutes.
3.Line a baking sheet with foil and place the salmon and sliced red onion on the sheet.
4.Sprinkle the salmon with salt and pepper and drizzle the salmon and onion with olive oil.
5.Broil the salmon for about 5 minutes and then spoon the prepared glaze over the fish. Finish cooking the salmon for an additional 2-3 minutes or until cooked through.
6.Serve the salmon and red onions with the rice and broccoli. Enjoy!
