Red Bean and Chicken Burrito

Package whole wheat tortillas
2 cups cooked kidney beans
2 cooked chicken breasts, chopped into bite size pieces
2 cups cooked rice (brown or white)
1 cup salsa
2 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
extra virgin olive oil
salt and pepper to taste
hot sauce to taste
2 cups chopped lettuce
4 diced tomatoes
1 cup diced olives
1 avocado, diced
1. Heat a large sauté pan on the stove and add just enough oil to lightly coat the bottom of the pan.
2. Add the kidney beans, chopped chicken, cooked rice, salsa, and spices. Bring to a boil and simmer for 2-3 minutes.
3. Warm the tortillas and spoon about 1/3 cup of filling into the tortilla. Roll the tortilla into a burrito and place on a foil lined baking dish. Sprinkle with cheese and place under the broiler. Broil until cheese has melted and is bubbling.
4. Carefully remove the burrito from the baking sheet and place on a plate. Top with lettuce, tomatoes, olives, avocados, shredded cheese and sour cream. Serve with chips and enjoy!
