Spring Time Stir Fried Rice

3 cups cooked rice 1/3 cup diced onion
1/3 cup chopped green onion
3 garlic cloves, minced
½ cup diced carrots 1/2 cup coarsely chopped asparagus
1 cup chopped spinach
1/3 cup chopped parsley
1/2 cup chopped artichoke hearts
1/2 cup peas
1 cup diced ham 3 eggs scrambled and coarsely chopped 2 tbsp fresh ginger, minced
Soy sauce to taste Salt and Freshly cracked pepper to taste
1.) Heat oil in a large saute pan. Add the onion, green onion, and garlic. Saute until fragrant (about 2 minutes).
2.) Add the carrots, asparagus, spinach, parsley, artichoke hearts, peas, ham, eggs, and ginger. Saute for about 2 minutes.
3.) Add rice and stir fry for about 4 minutes.
4.) Season with soy sauce, salt and pepper. Serve and Enjoy!
