1 pound mild Italian Sausage
2 -3 large Klondike Rose potatoes, diced
1 large onion, diced
2 garlic cloves, minced
2 cups kale, coarsely chopped
6 cups chicken broth
1 cup heavy cream
salt and pepper to taste
1.) Chop the sausage into bite size pieces and brown in a large pot.
2.) Add the Klondike Rose potatoes, diced onion and garlic. Sauté until fragrant (about 2 minutes).
3.) Add the chicken broth and bring to a boil. Reduce the soup down to a simmer and continue cooking for about 10 minutes.
4.) Remove the soup from the heat and add the chopped kale and cream. Stir to combine.
5.) Serve with crusty whole wheat bread and side salad. Enjoy!
